Wheat Kheer or Wheat pudding is a traditional recipe, wheat pudding is very beneficial for taste as well as health, this wheat pudding is very tasty, so let’s know This is how to make wheat pudding.
Ingredients for Wheat Kheer
Wheat – 1/2 cup (100 grams) (soaked)
Sugar – 1/4 cup (50 grams)
Jaggery – 1/2 cup (60 grams)
Ghee – 3 – 4 tbsp
Milk – 1 liter
Coconut – 1/4 cup (grated)
Cashews – 10 – 12 (finely chopped)
Almonds – 10 – 12 (finely chopped)
Cardamom – 1/4 teaspoon (4)
Nutmeg – 1/4 teaspoon
To make wheat pudding, first wash the wheat thoroughly and soak it in water for half an hour.
After half an hour filter the wheat in a sieve and remove the water. After filtering with a sieve, if there is still light water in the wheat, then to remove it, we will wipe the wheat on a cloth, by doing this, it will drain all its water.
The wheat has dried well
After the wheat has dried well, put the wheat in the mixer jar to peel it and stir it at the lowest speed for a few seconds and turn it off. Doing this will remove the skin of wheat. We will repeat this process 5 to 6 times so that the whole skin peels off.
Take out the peeled wheat in a plate and separate the peels from the wheat by splitting them, now wash the wheat with water twice, by doing this the remaining peels will also separate from the water.
Take a cooker, add 1.5 cups of water to it and add washed wheat to it, keep the wheat on low flame for one whistle until it boils. After one whistle in the cooker, reduce the flame to low and let the wheat boil on low flame for 10 minutes. Turn off the gas after 10 minutes.
Take milk out in a vessel and keep it for boiling, after a boil, reduce the flame and keep the milk on low flame till it thickens. Take a pan, add 1 tsp ghee to it and heat the ghee. Put almond in ghee and roast it while stirring it on medium flame. After the almonds turn light brown, take them out in a bowl. Similarly, roast 10 to 12 cashew nuts.
Put 2 teaspoons of ghee in the same pan and add grated coconut to it and fry it lightly, add boiled wheat and fry it on medium flame for 2 to 3 minutes. Add boiled milk to the wheat. Mix milk and wheat well and cook it on low flame for 10 minutes until it is thick.
After the wheat is well mixed and thickened in milk, add some fried cashews, almonds, nutmeg powder, cardamom powder and mix. Kheer is ready
Traditionally, Wheat Kheer or wheat pudding can be made in two ways, using jaggery or sugar as per taste.
